Can you temporarily disable /switch off the automatic inflation and use it manually only ?

The Auto inflator part can be unscrewed and temporarily removed then the jacket will only work in manual (pull cord) mode. This isn't recommended as it would be easy to forget to return the jacket to its correct auto functionality.
